You go/fly close to the part you want to work on, then enable the "attachment/engineering mode" and then you can either chose from parts inside the Kerbals cargo space or if a cargo container is close enough then you can select a part from there

L41[15:30:55] <Mat2ch> to exit the "attachment/engineering mode" just close this dialog on the left side
